Intense commercial fishing has resulted in sturgeon becoming an endangered species. However in 1988, on the untouched river Tormo, which lies in a national park (Pianura Padana) in the heart of the Italian province of Lombardy, a company specialised in sturgeon breeding Salmo-Pan was founded. The result of years of intense work and research is an exclusive Italian caviar - ADAMAS caviar. Today Salmo-Pan is one of the leaders in the fish farming industry.
ADAMAS® Fish Farm
ADAMAS caviar is produced from sturgeons reared in the Tormo River Natural Park. The river Tormo, which is also known as Rio Tormo, is an atypical river, in that it its waters come entirely from natural underground springs (already known in the medieval period as "flumen Turmum" ). Thanks to its pure underground spring origin, the water of the Tormo river is always clear and crystalline, cool in summer and temperate in winter.
These characteristics make it ideal for the breeding of sturgeon. Here, specifically selected sturgeons are raised with GMO free fodder. This leads finally to the production of caviar made by the best international masters, using the ancient and traditional “Malossol” (from Russian: little salt) method.
ADAMAS controls the entire process, in total respect of the environment, including the use of clean power and carefully selected raw materials. ADAMAS caviar is luxury food with its roots in a proper, environmentally correct agricultural/breeding philosophy.
ADAMAS & CITES
A cherished goal of ADAMAS caviar is to fully respect the CITES treaty in order to protect sturgeon and produce ecologically friendly caviar.
CITES (the Convention on International Trade in Endangered Species of Wild Fauna and Flora) is an international agreement between governments. Its aim is to ensure that international trade in specimens of wild animals and plants does not threaten their survival. ADAMAS fully supports CITES goals and treaty and works for the protection of sturgeon species.
